1 cup of bulgur (medium or #1 cracked wheat) 1 cucumber (peeled and diced) 3 tomatoes (cut in small wedges) 2 medium sized white onions (chopped in small pieces) 1 large tin of green peas (drained) 20 springs of fresh parsley (minced) ½ cup lemon juice (fresh) ¼ cup olive oil 1 can vegetable juice (8 oz) 1 tablespoon salt ½ teaspoon black pepper 2 tablespoon mint leaves pulverized ½ cup fresh mint leaves |
Wash bulgur wheat 3 times and soak for about one hour. The wheat should be expanded and soft to the touch. Drain wheat well making sure it has no water, then put in a deep bow. Add all vegetable ingredients and mix well. Now add vegetable juice, olive oil, lemon juice and spices. This should be served immediately after mixing. Put one tablespoon on lettuce leaf, roll and eat. |
