2 large ripe tomatoes 1 lb small shrimp 2 cloves garlic 2 tablespoon olive oil 1 tablespoon red pepper flakes chopped cilantro cocktail sauce or thousand Island dressing |
Peel and devein shrimp. Sautee in olive oil with garlic and pepper flakes. Cool to room temperature and then put in the refrigerator. Meanwhile core the tomatoes and slice the top off to make a bowl like vessel. Chop portion of tomato that was removed. Mix shrimp, chopped tomato, cilantro, dressing and whatever else you want to add. Stuff tomato with mixture. Chill and serve. |
