Bimecacule (Sweet Rice)

Ingredients:
1 cup rice
2 cups brown sugar
2 cups coconut milk
nutmeg
cinnamon
vanilla
Instructions:
Grate and strain one coconut for two cups of milk.
Place milk in pot and heat.
Add brown sugar and spices.
When mixture comes to a boil, add the washed rice and a pinch of salt.
Cover.
Turn rice when necessary. Food is cooked when rice grains swell and burst.
Notes:
Mostly used for the 9-night or a wake, a gathering of family and friends of deceased before a funeral, usually the night before the individual is to be buried.
